WW: Holiday Season continues

After last week's display of Macy's special holiday season, this week I have Bloomingdale's :).
Don't get me wrong, it has nothing to do with advertorial post but I just love to see all those festive and I-can-say-full-of-entertainment windows.

This year, let's welcome Bloomingdale's Lights Up a Young Mind program, which involves a group of dynamic visual artists for creating one-of-a-kind masterpiece related to the theme, lights. And all those chandeliers being displayed will auctioned and the proceeds will go to charity!

Let's check 'em out et  happy windows shopping :)

Wonderful Wednesday with Oh My Heartsie Girls

Apa kabar semua?

Hope everyone is healthy and warm, especially those facing winter wherever you are.
NYC, as always, is beautifully (or annoyingly, to some) cold.
I mean, the weather can't get any weirder.

Last Saturday, we had snow coming and 2 days before that, the temperature dropped to minus 1010degree C, felt like minus 15 degree C! Or equal to 12 degree Farenheit felt like 2 degree.
Then after the snow, it was raining cats and digs and the temperature warmed up to 10 degree C or 52 degree degree farenheit!
Now I sound like a weather lady, lol >_<

My birthday boy :)

And..we also have Abang Bo's birthday last Sunday!
That completes the birthday saga in my family :)

But let me now invite to our weekly round-up and linky party!

Kroket Kentang - Potato Croquettes with Beef and Vegetables

Hello, everyone.. how's your holiday baking?

It surely is one of the busiest time during the year.
Although we don't celebrate Christmas, enjoying time together in our kitchen is always fascinating.

I was a bit unlucky as the oven at home was not functioning properly.
We don't know exactly what's going on as we use the oven and stove normally until it suddenly beeps repeatedly and show the error sign!
Well, well... while waiting for the technician coming and fixing it, I just have to pause my baking for a while. Hope it won't be that long!

So, now... I decided to try another favorite recipe in the house.
This time, let me introduce you to Kroket Kentang, or Potato Croquettes with beef and vegetables.
Perhaps, you would like to try this easy recipe to complete your holiday baking, especially if you want to add some savory dishes to your festive tables.

I love eating it with fresh chili :)
I have shared similar recipe, Perkedel Kentang, here before.
The ingredients and the cooking method are the same, the only difference is the filling.
With Kroket Kentang, we usually have ground beef and vegetables filling wrapped in delicious potato dough. The filling itself can be freely modifies. If you feel like adding vegetables only, you can have small dice-cute carrots and green peas inside.

So, ready to try it?
Here we go...

Ingredients:

4 pieces of big potatoes - I always use Idaho potatoes here because its texture is nice and perfect for kroket kentang. Sometimes, I mix mash potato powder to add some texture
Garlic - smashed, or if you prefer, you can use garlic powder
Shallot - ground
Salt - as desired
Pepper - as desired
Ground nutmeg - as desired. I love it so much because it gives you different, yet enticing aroma

For filling:
Ground beef  1-2 pounds, depending
Carrots
Green peas
Shallot
Sweet soy sauce

Egg - beaten, for dipping before deep frying
Bread crumbs
Oil - for deep frying
Fresh chili for garnish if desired

How to cook:

First, boil all the potatoes until they are soft enough. But not too long so it won't be too soft.
Some people love to fry the potatoes and mash it instead, but I prefer boiling it.
Using potato masher or like me, using my traditional mortar and  pestle, mash the potatoes all together with garlic, ground shallot, nutmeg powder, salt, and pepper. Mix them all together until in becomes a perfect potato dough.

Then let's prepare the filling. Saute the thinly sliced shallot until fragrant, add ground beef and cook it well. Don't forget to sprinkle salt, pepper, and sweet soy soy before adding carrots and green peas. Mix them well and cook it for about 5-7 minutes.

Shape the potato dough with beef and vegetables filling inside, make it oval or any shape you prefer.
Dip it in the beaten egg and roll it into bread crumbs.
Deep fry it until beautifully golden and cooked.
Garnish and eat it with fresh chili if you like.

Enjoy your Kroket kentang!

12 Tahun...

Tuhan memang adil.

Sweet life!
So full of wonderful surprises that never fail to bring smiles to our face.

Sumpah..
He was the last person in my mind yang terpikir bakal jadi pendamping hidup saya.
And I found that cute!
Ajaib kan :).

But I have to admit that my munchkin, Udi, is meant for me.
Kami dekat cukup lama, hampir 9 tahun, sebelum akhirnya memutuskan untuk menikah.
And he knows me so well, even better than myself sometimes.
He's our greatest caretaker indeed!

Kadang saya berpikir, what can I do without you, Pak.
Dan saya percaya, I'm getting stronger because of you.

Betapa saya beruntung, diberi rezeki penggenap jiwa dan cinta-Nya lewatmu.
Sesuai janji-Nya.
Selalu Ia genapkan kekurangan dan kelebihan kita dengan si pasangan jiwa, soulmate, penyejuk jiwapenggenap.

I am truly blessed.

Dan tanggal 12 Desember 2016 ini, 12 tahun saya menjalani hidup bersama my munchkin.

Mantap mengarungi keseruan hidup berdua.

And happy anniversary, too.
You know very well that the love that now exists is the love I can never resist, so stay by my side.

And no, this is not a tribute.
I wish I could write those hearty notes :).
My words are cold and flat and you deserve more than that, kalau kata Michael Buble :)
But here's a thousand cheers for your long lived, blessed life.
To the deep kindness of your heart.
And unconditional love you shower us.

Bear hugs and kisses,

Mama, Bo et Obi

Keto Nasi Lemak Recipe - Easy Low Carb For Weekly Meal Plans

Hi, everyone.
This time, I have decided to have a guest post from those who share the same passion in cooking. Please welcome Jennifer Brown from Iamaddictedtocooking.com.
Ready to check out what she has prepared for us?
Here we go...

Keto Nasi Lemak Recipe For Weight Loss
The Ketogenic diet is an important diet that encompasses high-fat content and low carbohydrate content. The diet is essential in handling many health problems such as type two diabetes, cardiovascular risks, epilepsy, triglycerides, polycystic ovarian syndrome, some patterns of LDL cholesterol, acne, and some types of cancers related to nerves and brain.
One of the tastiest and delicious Ketogenic recipes that I discovered recently is Keto Nasi Lemak. This is a very popular rice dish in Singapore, Malaysia, Indonesia and Brunei. In fact in Malaysia, this meal is regarded as a national dish. It is served in restaurants, night markets, by street vendors and cooked in homes across the country.

Per serving, it offers 501.7 calories, 39.9 g fats, 6.9 carbohydrates and 28.1 g proteins making it one of the best meals for those who want to lose weight and achieve maximum health.

Things You’ll Need
To prepare Keto Nasi Lemak, you will need kitchen appliances and items such as a cooker, a plastic spoon for mixing ingredients, a wooden spoon for stirring, cookware set, pots and pans of different sizes.

Ingredients
The following are the ingredients you need to prepare 2 servings of Keto Nasi Lemak.

Fried Chicken
• 2 boneless Chicken Thighs
• 1/4 tablespoon Turmeric Powder
• 1/2 tablespoon Curry Powder
• 1/2 tablespoon Lime Juice
• 1/2 tablespoon Coconut Oil
• 1/8 tablespoon Salt

Nasi Lemak
• 3 tablespoon Coconut Milk (from the can)
• 3 slices Ginger
• 1/2 small Shallot, sliced
• 200 grams riced Cauliflower
• 1/4 table Salt
• 4 slices Cucumber

Fried Egg
• 1 large Egg
• 1/2 tablespoon Unsalted Butter

Preparation Procedure
1. Prepare 200 grams of cauliflower rice, dry it out by squeezing water out and then put it aside. Check online to get more instructions about ricing cauliflower.
2. Soak 2 boneless Chicken Thighs with 1/2 tablespoon Lime Juice, 1/4 tablespoon Turmeric Powder, 1/2 tablespoon Curry Powder and 1/2 tablespoon Salt. Set them aside.
3. Prepare Sambal. Chop one large Onion and blend the pieces until they turn smooth. Set aside. Cut 0.35 ounce Dried Chilis, remove seeds and boil until soft and blend to a paste once they are cooled. Melt 2 tablespoon Coconut Oil in a heated pan and add the blended dried chilies and onions, 1/2 tablespoon Salt and 3 tablespoon Reduced Sugar Ketchup. Allow them to simmer until the oil separates from the sauce.
4. Fry the soaked chicken thighs that you set aside until they turn brown.
5. Prepare the rice by boiling 3 slices Ginger, 3 tablespoon Coconut Milk, 1/4 tablespoon Salt and 1/2 small Shallot in a saucepan. Add in the riced Cauliflower once you see bubbles and mix well.

6. Serve the meal with fried egg, cucumber slices, chicken, and Sambal.

Conclusion
I have prepared this delicious dish several times and my kids always love to eat it. I have also come to like this Ketogenic recipe because it is a low carb diet and a great source of minerals, vitamins and unsaturated fat.
