WW: Eid Al-Fitr Delicious Cuisines


Eid Al-Fitr will not be complete without its famous, extravaganza delish cuisines.
This year, since we do not mudik or go back to our hometown, many of us have to prepare the traditional Lebaran cuisine on their own. Well, we can obviously order it from many restaurants and food vendors that provide them, but for me, Eid Al - Fitr is so special I feel like I have to cook them myself!

The traditional menu on Lebaran day usually comprises of ketupat (rice cake wrapped in  specially-woven coconut leaves), rendang (the world wide famous spicy beef with coconut milk), opor ayam (chicken stew with coconut milk), sambal goreng ati (spicy potato and beef liver), semur daging (Indonesian sweet beef stew) and sayur ketupat (Indonesian spicy vegetable soup). Not to mention the cookies! My fave is always be the kaastengels or the cheese cookies and nastar, the one with pineapple jam. Well, even writing them down here is mouthwatering for me LOL.

This year, I was somehow too tired and lazy to cook for Lebaran Day at the end of Ramadhan. But I was so lucky as my little brother was cooking a lot and sent some food to my home, especially sayur godog for ketupat and sambal goreng ati. We bought ketupat from our neighbors so we only need the main courses.  Then on the second day of Eid Al Fitr, I decided to cook opor ayam and adding sambal goreng ati. Not too late as we are still celebrating the big day. Here's what I got.

Ingredients:
·       3/4 cup of extra virgin olive oil
·       1 ½ tsp. of ground pepper
·       1/3 cup of fresh lemon juice
·       ½ tsp. of salt
·       ½ tsp. of sugar
·       2 minced garlic cloves
·       ½ tsp. of grated lemon peel
·       ½ tsp. of red pepper flakes
·       16 uncooked shrimp, peeled
·       8 grape tomatoes
·       Cooked rice
·       1 medium red onion, cut into 8 wedges
·       ¼ cup of Parmesan cheese
·       8 large fresh mushrooms

Directions:
·       Firstly, mix the first eight ingredients in a large bowl.
·       Pour 2/3 cup into a plastic bag and add uncooked shrimp.
·       Then, seal the bag and refrigerate it for half an hour.
·       After 30 minutes, drain and discard marinade.
·       Next, alternately thread both shrimp and vegetables on 8 metal or wooden skewers.
·       Grill and cook over medium heat for about 2-3 minutes until shrimp turn pink.
·       Turn once and regularly baste with reserved marinade.
·       Finally, sprinkle with cheese and serve with hot cooked rice.

2. Spicy Coconut Shrimp With Quinoa

You can enjoy generous servings without needing to worry about its calories. However, it is also rich in protein, which will provide your body with energy.
Ingredients:
·       1 cup of quinoa
·       ¼ tsp. of salt
·       2 cups of water
·       1 tsp. of extra virgin olive oil
·       1 tbsp. of minced gingerroot
·       1 medium onion, chopped
·       ½ tsp. of curry powder
·       ¼ tsp. of salt
·       ½ tsp. of ground cumin
·       ¼ tsp. of cayenne pepper
·       2 cups of snow peas, trimmed
·       1 pound uncooked shrimp, peeled
·       1 tbsp. of orange juice
·       3 tbsp. of coconut milk
·       ¼ cup of minced cilantro
·       ¼ cup of shredded coconut, toasted

Directions:
·       Mix quinoa, salt and water in a large saucepan and then boil it up.
·       Reduce the heat and then simmer it for about 12-15 minutes.
·       Then, remove from the heat and fluff using a fork.
·       At the same time, heat olive oil over medium heat in a large skillet
·       Next, add onion and cook it for 4-6 minutes.
·       Mix in cumin, ginger, curry powder, cayenne and salt. Cook for 1-2 minutes.
·       Add snow peas and shrimp to the skillet. Cook and stir about 3-4 minutes.
·       After that, stir in orange juice and coconut milk.
·       Finally, top with cilantro and toasted coconut and serve with quinoa.

3. Simple Shrimp Pad Thai

This is another version of pad thai. Mix in brown sugar and soy sauce, and add a sprinkle of roasted peanuts and cilantro for a special marinara sauce.

Ingredients:
·       8 ounces of uncooked rice noodles
·       3 minced garlic cloves
·       2 large eggs, beaten
·       2 tbsp. of canola oil
·       1 cup of marinara sauce
·       1 pound uncooked shrimp, peeled
·       2 tbsp. of brown sugar
·       ¼ cup of soy sauce
·       A few fresh cilantro leaves
·       ¼ cup of roasted peanuts, chopped
·       Hot pepper sauce
·       1 lime, cut into wedges

Directions:
·       Cook noodles according to the directions on the package.
·       At the same time, stir-fry garlic and shrimp in oil until shrimp turn pink.
·       Remove it from heat and keep warm.
·       Then, add eggs and cook and occasionally stir until set.
·       Add the marinara, brown sugar and soy sauce.
·       After that, drain noodles and toss with shrimp mixture.
·       Finally, sprinkle with cilantro and peanuts and serve with lime and hot pepper sauce.

4. Sesame Cilantro Shrimp

You can make this dish in 10 minutes, so it is ideal for making on days when you do not want to spend much time in the kitchen.

Ingredients:
·       1/2 cup plus 1 tbsp. of toasted sesame salad dressing
·       Lime wedges
·       1 pound of uncooked shrimp, peeled
·       3 cups of cooked brown rice
·       ¼ cup of fresh cilantro, chopped

Directions:
·       Heat about 1tbsp. of sesame salad dressing over medium heat in a large skillet.
·       Then, add shrimp to the skillet. Cook and occasionally stir 1 minute.
·       Mix in remaining dressing and cook for 1-2 minutes.
·       Finally, sprinkle with cilantro and squeeze lime juice over top. Serve with cooked rice.

5. Thai Shrimp Stir-Fry

The combination of ingredients gives this dish a tasty Thai flavor, while red pepper flakes and ginger spice it up. You can eat this colorful main dish with pasta.

Ingredients:
·       2 medium red peppers, cut into a few thin slices
·       1 cup of snow peas
·       1 tsp. of canola oil
·       1 minced garlic clove
·       ½ cup of green onions, sliced
·       2 tbsp. of peanut butter
·       4 ½ tsp. of soy sauce
·       1 tbsp. of rice vinegar
·       1 tsp. of sesame oil
·       1 tsp. of minced gingerroot
·       ½ cup of chicken broth
·       1 pound of uncooked shrimp, peeled
·       1/2 teaspoon crushed red pepper flakes
·       Hot cooked fettuccine

Directions:
·       Firstly, stir-fry red peppers in canola oil for about a minute.
·       Add the green onions, snow peas and garlic and then stir-fry 2-3 minutes. Remove from the heat and keep warm.
·       Then, add the peanut butter, broth, soy sauce, sesame oil, vinegar, ginger and pepper flakes to the same skillet.
·       Cook and stir until the mixture comes to a boil.
·       After that, stir in shrimp and cook for 2 minutes.
·       Return red pepper mixture to the skillet and heat it up.
·       Finally, serve it over fettuccine.

6. Garlic Lemon Shrimp

You can make this simple pasta in a few minutes. Serve this dish with crusty bread if you want to soak up the garlic lemon sauce.

Ingredients:
·       2 tbsp. of olive oil
·       1 pound of uncooked shrimp, peeled
·       1 tsp. of ground cumin
·       1 tbsp. of fresh lemon juice
·       3 sliced garlic cloves
·       ¼ tsp. of salt
·       2 tbsp. of minced parsley
·       Hot cooked rice or pasta
Directions:
·       Firstly, heat oil over medium-high heat in a large skillet and then saute shrimp about 3 minutes.
·       Add cumin, salt, garlic, and lemon juice. Cook and occasionally stir until shrimp turn pink.
·       Finally, stir in parsley and serve with cooked rice or pasta.

7. Shrimp Fried Rice

This delicious shrimp dish is packed with color and taste. Bacon adds crispness to the dish and a little bit of heartiness.

Ingredients:
·       4 tbsp. of butter
·       3 cups of cold cooked rice
·       4 large eggs, beaten
·       1 package of frozen mixed vegetables
·       ½ tsp. of salt
·       ¼ tsp. of pepper
·       1 pound of uncooked shrimp, peeled
·       8 bacon strips, cooked

Directions:
·       Firstly, melt 1 tbsp. of butter in a large skillet
·       Pour beaten eggs into skillet. When the eggs set, lift the edges and let uncooked part flow underneath.
·       Then, remove eggs and keep them warm.
·       Melt the remaining butter in the same skillet.
·       Mix in the rice, shrimp and vegetables. Cook and occasionally stir for 5 minutes.
·       At the same time, chop eggs into a few small pieces.
·       After that, return eggs to the skillet. Add salt and pepper and cook it until heated, stirring occasionally.
·       Finally, sprinkle with bacon.

8. True Shrimp Creole

If you are looking for easy shrimp recipes for dinners, you should not forget this recipe. This recipe is more delicious if refrigerated overnight when all the flavors are blended.

Ingredients:
·       1/4 cup of all-purpose flour
·       1 medium onion, chopped
·       1/2 cup of canola oil
·       1 chopped green pepper
·       1 chopped onion
·       1 minced garlic clove
·       1 chopped celery rib
·       1 can of stewed tomatoes
·       1 can of tomato paste
·       4 bay leaves
·       1 tbsp. of Worcestershire sauce
·       1/2 tsp. of hot pepper sauce
·       2 pounds of frozen or fresh uncooked shrimp, peeled
·       Pepper and salt
·       Hot cooked rice
Directions:
·       Mix oil and flour until smooth in a large skillet.
·       Cook it over medium heat until flour becomes brown.
·       Then, add green pepper, onion and celery. Cook them until tender, about 5-6 minutes.
·       Mix in garlic and cook 1 minute longer.
·       Add next six ingredients and simmer 4-5 minutes.
·       After that, add shrimp and simmer until shrimp turn pink.
·       Finally, discard bay leaves and serve with rice.
