Bakwan - Vegetables Fritters a la Indonesia

Spring is finally here and let's welcome it with fresh, yummy food.
NYC, unsurprisingly, is a bit on et off in terms of the weather. We have rainy days and windy morning, while almost at the same week, we have sunshine and warm days as well.

So, with this mixed weather, let me introduce you to one of my family's favorite munchies.

Bakwan - vegetables fritters a la Indonesia.

Coba bayangkan...

[BAKWAN...waaaan waaan] *Pakai echo biar seru.

Iya, bakwan..

Originally, bakwan or the vegetables fritter is made of flour mixed with bean sprout, cabbage, and carrots. You can easily find them all here in NYC, but for sure you can toss any vegetables you like or you have in your fridge. Like I did :).

So, here what I have this time.
Let's start cooking.

Ingredients:

Flour - as needed
Kale - chopped
Asparagus - thinly sliced
Baby carrots - thinly cut
Other vegetables you prefer like cabbage and bean sprouts
Eggs - 2, beaten
Parmesan
Salt
Pepper
Coriander - if you like, harshly ground
Oil for frying

How to cook:

Mix all the veggies, flour, salt, pepper, coriander (if you like), parmesan and eggs. Add water little by little until the dough is well mixed and sticky, not too runny. Put the oil on your frying pan, heat it, and take a spoonful of the dough. Fry it until golden brown and bakwan, vegetables fritters a la Indonesia, is ready for you. Take fresh chili or chili sauce together with bakwan and enjoy.
